Ergothioneine (L-Ergothioneine, EGT) is a rare natural chiral amino acid. It is primarily found in mushrooms, broccoli, Brussels sprouts, and other plants, as well as in certain bacteria. However, animals cannot synthesize it on their own and must obtain it through food, where it accumulates in tissues and cells. Since ergothioneine was discovered in animal organ tissues, scientists have conducted numerous studies to explore its benefits. These studies have shown that ergothioneine effectively scavenges free radicals that cause skin aging, protects cell membranes and mitochondrial membranes from oxidative damage, and provides protection against ultraviolet radiation, among other functions. As a result, ergothioneine has wide applications in the food, cosmetics, functional foods, and biopharmaceutical industries.
